2 eggs at room temp
1/2 cup unsweetened cocoa powder
2 oz. (l/4 cup) red food coloring
2-1/4 cups cake flour or 2 cups all purpose flour
1/2 cup chortening
1-1/2 cups sugar
1 t vanilla
1 cup buttermilk
1 t baking soda
1 t vinegar
Preheat oven to 350.
Grease and lightly flour two 9x1-1/2 inch round cake pans or 1 13x9x2 inch baking pan.
In bowl stir together cocoa powder and food coloring.
In another bowl stir together flour and 1/2 t salt.
In mixing bowl beat shortening with electric mixer on medium to high speed for 30 seconds.
Add sugar and vanilla, beat until well combined.
On medium speed add eggs one at a time....make sure egg is combined before adding the next egg.
Beat in cocoa mixture.
On low to medium speed alternately add flour mixture and butter milk, make sure each is combined before adding the next.
Stir together bakng soda and vinegar and add to batter, mixing until combined.
Pour mixture into pan(s).
Bake 30 to 35 minutes for 2 pans and 30 min. for one pan.
Cake is done when a toothpick is inserted in the center and comes out clean.
