TEN BEAN SOUP

Cover 1 lb. of mixed beans (washed) with water in a 6 qt. pot. Soak 10-12 hours.

Drain and add 2 qts water and ham or ham hocks. Simmer for 2-1/2 to 3 hours.

Then add:

2 stalks celery, sliced thin
1 clove garlic, minced
2 carrots, sliced thin
Juice of one lemon
Salt and pepper
1 large onion, chopped
1 large can of tomatoes
1 large red or green pepper, minced.

Simmer 40-50 minutes more.
