BREAKFAST CASSEROLE

3 Cups frozen shredded hash brown potatoes
3/4 Cup shredded cheddar or pepper jack cheese
1 Cup diced ham
1/4 Cup sliced green onion
4 beaten eggs
1-1/2 Cups evapoated milk
1/2 t Pepper
1/4t Salt

Grease a quiche dish or a 2 quart baking dish.

Arrange potatoes evenly on the bottom of the dish.

Sprinkle with cheese, ham and green onion.

In a medium bowl, combine eggs, milk, pepper and salt. Pour egg mixture over potato mixture.

Cover and refrigerate overnight.

Remove cover and place casserole in a cold oven. Turn on oven to 350 degrees.

Bake 40 to 55 minutes, or until egg is set in center
