5 loaves (1 # each) day-old white bread, cubed
5 # pork sausage, cooked and drained
2-1/2 C chopped celery
1/2 C finely chopped onion
2 # butter or margarine
3-3/4 to 4-1/2 C chicken broth, divided
1 T salt
2 t rubbed sage
1-1/2 t pepper
1 t dired thyme
1 t celery salt
1 t poultry seasoning
1 t seasoned salt
Toss the bread cubes and sausage, set aside.
In a saucepan, over medium heat, saute celery and onion in butter until tender. Remove from heat. Stir in 3-3/4 C broth and seasonings, mix well. Pour over bread mixture, mix well. Add desired amount of remai8ning broth.
Place mixture in four greased 3-qt. baking dishes.
Cover and bake 325 for 1-1/4 hours.
Uncover and bake 15 minutes longer or until heated through.
Yield: about 50 servings
