12 small new potatoes
4 tsp. butter
4 tsp. minced fresh parsley (or 1-1/2 tsp. dried parsley)
4 tsp. minced fresh chives (or 1-1/2 tsp. dried chives
Peal 1/2" strip around center of each potato.
Cover potatoes with water and boil until easily pierced with fork (about 20 minutes).
Drain and cover to keep warm.
Melt butter in microwave.
Stir in parsley and chives. Pour mixture over potatoes and toss to coat.
Variety: Sprinkle with cooked chopped bacon and/or finely minced green onions.
